Costra Rice is the most popular dish in Elche, our town in Spain.
"The Costra Rice" is always cooked when all the family is together for having lunch, usually at weekends or on Special Days.
The most important thing of this dish are the ingredients that are used and how they are cooked.
We use local and traditional sausages, as white and red, black pudding, chorizo and chicken. We cook the rice with special care so it is not overcooked and, when it is finished, we add eggs on the top and goes in the oven.
